For this year’s International Sushi Month specials, our chefs created a set of aburi nigiri, accompanied by a hojicha cocktail.

ABURI SETTO

  • Maguro Aburi. Seared soy cured tuna, garlic butter, tsume, Parmesan & truffle dust.
  • Shake Aburi. Seared salmon, miso aioli, marinated ikura & daikon cress.
  • Abokado Aburi. Seared avocado, Rossini Black Label Caviar.
  • Hiramasa Aburi. Seared hiramasa, yuzukosho, shiso leaf, tsume & tosazu gel.
  • Wagyu Aburi. Seared Japanese Wagyu, Parmesan, shiitake & soya sesame rice korokke, miso aïoli, tsume & kizami wasabi.

Available individually or as the full Aburi Setto.

HOJICHA YUME

For International Sushi Month, our Head of Bars Vicky created Hojicha Yume – a cocktail blending raspberry, hojicha and Suntory Haku Vodka, which is made from rice and chosen especially for this year’s campaign.

Come and celebrate International Sushi Day with us all of June in our restaurants in Copenhagen. We serve limited-edition specials inspired by contrast, craftsmanship and the good things that happen when different cultures meet around one table.

Because every day, in our kitchens, something else happens. Different hands working side by side. Creating something none of us could create alone. For International Sushi Month, we created a sushi tablescape inspired by exactly that.
